Life’s need perfectly balanced!!!! –Sarin Basley
2 cloves garlic
5Tbsp. lime juice
3Tbsp. palm or brown sugar*
2Tbsp. fish sauce
2T bsp. dried, chopped shrimp – chop
1 yellow tomato sliced and diced
1 -1/2 pounds green papaya, halved and seeded
Equipment: Julienne peeler or grater
Mix first 3 ingredients. Add shrimp, olives, and tomatoes.
Peel or grate papaya
Mix all with papaya
Use any greenery for garnish.

Glass Noodle Salad (Yum Woon Sen)
2 cups water
1 cup Pork Mince
1 cup Glass Noodle
1/2 cup Peanuts(toasted)
1-1/2 Tbs. Chillies
1 Spring Onion
1 Sprig Coriander
2 Tablespoons Lemon Juice
1 Tablespoon Fish Sauce
2 Teaspoon Sugar
2 Teaspoon Cut Tomato
1. Boil water in the saucepan, add the salt and chop the garlic and add it into the pan.
2. When the water is boiling, add the pork mince and glass noodle and simmer for 4 minutes. Then pour out half of the water.
3. Chop the chillies, spring onion, and coriander into a pot with glass noodles.
4. Toast the peanuts in a dry frying pan to bring out the flavour.
5. Add the fish sauce, sugar, lemon juice, and peanuts and then mixing all ingredient together.
